Method
Rinse the wheat berries, chickpeas and haricot beans separately, place each in its own bowl, cover generously with cold water, and leave to soak overnight.
The next day, drain and rinse the soaked wheat berries, chickpeas and beans.
Put the wheat berries in a large saucepan, cover with plenty of the water, and simmer until tender, topping up the water as needed.
Add the drained chickpeas and haricot beans to the pan and continue simmering until all the grains and pulses are soft.
Stir in the rice, remaining water, sugar, cinnamon stick and orange zest, and simmer gently, stirring often, until the rice is cooked and the pudding has thickened to a loose porridge consistency.
Stir in the chopped dried apricots, raisins and walnuts and simmer for a few more minutes to soften the fruit.
Remove the cinnamon stick, stir in the rosewater, and ladle the pudding into serving bowls.
Scatter each bowl with pomegranate seeds before serving, chilled or at room temperature.
