Method
Confirm the buah keluak nuts are commercially prepared and cured; never attempt to process raw, unfermented nuts, which contain toxic hydrogen cyanide.
Place the cured nuts in a bowl of water and leave to soak for a further 2 days, changing the water twice daily, to fully rehydrate the shells.
Crack open each soaked nut, scoop out the dark paste inside and reserve the empty shells.
Mix the scooped paste with the minced pork, a little salt and pepper, then spoon the mixture back into the empty shells.
Blend the shallots, garlic, galangal, lemongrass, soaked chillies and candlenuts into a paste.
Heat the vegetable oil in a wok and fry the blended paste with the turmeric powder until fragrant and the oil separates.
Add the chicken pieces and turn to coat well in the paste, searing lightly.
Pour in the water, add the tamarind paste, palm sugar and the stuffed nuts, and bring to a simmer.
Cover and simmer gently for 45 minutes until the chicken is cooked through and the flavours have infused the sauce.
Insert a meat thermometer into the thickest piece of chicken; it must read at least 74 degrees Celsius before serving.
