About this dish

Method
Place the dried wood ear mushrooms in a bowl of warm water and leave to soak for 20 minutes while you prepare the other ingredients, then drain and slice thinly.
Thinly slice the chicken thighs into bite-size strips.
Peel and cut the ginger into fine matchsticks, then finely chop the garlic, slice the chilli and cut the spring onions into 4cm lengths.
In a small bowl, stir together the oyster sauce, light soy sauce, sugar and white pepper.
Heat the vegetable oil in a wok over high heat until shimmering, then add the garlic and ginger and stir-fry for 30 seconds until fragrant.
Add the chicken and stir-fry for 6 minutes, turning frequently, until no longer pink and a meat thermometer inserted into a thick piece reads 74°C.
Add the wood ear mushrooms, chilli and the sauce mixture, and toss for 3 minutes until everything is well coated and the sauce has thickened slightly.
Stir in the spring onions, toss for 2 minutes, then transfer to a serving plate.
