Method
Soak the dried red chillies in warm water for 10 minutes until softened, then drain.
Cook the rice stick noodles in a pan of boiling water for 4 minutes until tender, then drain and divide between bowls.
Pound the softened chillies, galangal, lemongrass, makrut lime leaves, shallots, garlic and shrimp paste into a smooth paste using a mortar and pestle.
Bring a saucepan of water to a gentle simmer, add the fish fillets, and poach for 8 minutes until a meat thermometer reads at least 63°C.
Drain the fish, reserving 300ml of the poaching liquid, then flake into large pieces, discarding any bones.
Heat the coconut milk in a large saucepan over medium heat, stir in the pounded paste, and cook for 4 minutes until fragrant and the oil starts to separate.
Add the flaked fish, fish sauce and the reserved poaching liquid, and simmer for 6 minutes until the sauce has thickened slightly.
Ladle the sauce over the noodles and serve immediately.
