Method
Poach the chicken thighs in a saucepan of water for 20 minutes until cooked through, then remove, shred and reserve the poaching liquid.
Insert a meat thermometer into the poached chicken; it must read at least 74 degrees Celsius.
Blend the shallots, garlic and soaked dried chillies into a paste.
Heat the vegetable oil in a wok and fry the spice paste with the curry powder until fragrant.
Add the sweet potato cubes, dried shrimp, chicken stock and reserved poaching liquid, and simmer for 20 minutes until the sweet potato is soft enough to mash.
Mash the sweet potato into the gravy with the back of a spoon until thick and smooth.
Blanch the noodles and beansprouts briefly in boiling water, then drain and divide between bowls.
Ladle the hot gravy over the noodles and top with the shredded chicken, tofu puffs, hard-boiled egg and chopped chives.
Serve with lime wedges on the side.
