Heat 2 tablespoons of vegetable oil in a wok over high heat until shimmering, then fry the noodles undisturbed for 2 minutes to blister the underside.
Toss the noodles and fry for a further 2 minutes until lightly charred in patches, then divide between four plates.
Wipe out the wok, heat the remaining oil, and fry the pork slices for 3 minutes until no longer pink on the outside.
Check the thickest slice of pork reads 63°C on a meat thermometer, then push to one side of the wok.
Add the garlic to the space in the wok and fry for 30 seconds until fragrant.
Pour in the chicken stock, oyster sauce, light soy sauce and dark soy sauce, and bring to a simmer.
Add the Chinese broccoli stems and simmer for 2 minutes until just tender.
Stir in the tapioca starch slurry and white pepper, and simmer for 1 minute until the gravy thickens and coats the back of a spoon.
Add the Chinese broccoli leaves and stir through for 30 seconds until wilted.
Ladle the gravy, pork and greens over the plated noodles and serve immediately.
