Method

Cut the paneer into 2cm cubes. Finely dice the onion, mince the garlic, grate the ginger, and finely slice the green chillies. Whisk the yogurt until smooth.

If using fresh spinach, blanch in boiling water for 2 minutes, drain, cool under cold water, and squeeze out excess water. Blend to a smooth purée. Set aside.

Heat 1 tbsp ghee in a large non-stick frying pan over high heat. Fry the paneer cubes for 3–4 minutes until golden on most sides. Transfer to a plate.

Heat the remaining 0.5 tbsp ghee in a large heavy pan over medium heat. Add the cumin seeds and sizzle for 30 seconds.

Add the onion and cook for 10 minutes until golden.

Add the garlic, ginger, and green chillies. Cook for 2 minutes.

Add the ground coriander, ground cumin, and turmeric. Cook for 1 minute.

Stir in the spinach purée. Cook for 5 minutes, stirring.

Reduce heat to low. Add the whisked yogurt one spoonful at a time, stirring constantly to prevent splitting. Cook for 3 minutes.

Add the golden paneer. Stir in the garam masala. Season with salt.
