Method
Rinse the rice, urad dal and fenugreek seeds together, cover generously with fresh water and leave to soak for 6 hours.
Drain the soaked rice and dal, then blend in batches with the 500 ml of water until you have a smooth, pourable batter.
Pour the batter into a large bowl, stir in the salt, cover loosely and leave in a warm spot to ferment for 10 to 12 hours, until risen and bubbly.
Stir the fermented batter well to knock it back to a pourable consistency, thinning with a splash of water if it has thickened.
Heat a griddle pan over medium-high heat and wipe it with a little vegetable oil.
Ladle a portion of batter onto the centre of the griddle and spread it outward in a thin spiral with the back of the ladle.
Drizzle a little oil around the edges and cook for 2 to 3 minutes, until the underside is golden and lacy and the edges lift easily.
Fold the thosai in half or roll it up, then lift onto a plate.
Repeat with the remaining batter, wiping the griddle with a little oil before each one, to make 4 large thosai.
