About this dish
A rich, creamy broth built from kombu dashi, soya milk, white miso and tahini rather than boiled pork bones, ladled over noodles with seared king oyster mushroom in place of chashu. Every bit as comforting as the original bowl.

Method
Soak the dried shiitake mushrooms in 500ml of the kombu dashi for 20 minutes until softened, then lift out, slice thinly and reserve the soaking liquid.
Heat the sesame oil in a large saucepan and fry the garlic and ginger for 2 minutes until fragrant.
Add the remaining kombu dashi, the reserved mushroom soaking liquid and the sliced shiitake, bring to a simmer and cook for 15 minutes.
Whisk in the soya milk, white miso paste and tahini until smooth, then simmer gently for 5 minutes without boiling hard, stirring often.
Meanwhile, pan-fry the king oyster mushroom medallions in a splash of oil in a frying pan for 6 minutes, turning once, until deeply golden and caramelised, then toss with the soy sauce.
Cook the ramen noodles in boiling water according to the packet instructions, then drain well.
Stir the sweetcorn into the broth, then divide the noodles between bowls, ladle over the broth, and top with the seared mushrooms, spring onion and torn nori.
