Method
Clean the duck thoroughly, pat dry inside and out, and rub the cavity with five-spice powder, ginger and spring onions.
Combine the golden syrup, dark soy sauce, rice vinegar and Shaoxing wine, warm gently until the syrup dissolves, to make the glaze.
Skewer the cavity closed and blanch the duck briefly in a pot of boiling water to tighten the skin, then pat dry again.
Brush the duck all over with the glaze and set on a rack uncovered in the fridge; leave to air-dry overnight, brushing with a second coat of glaze partway through.
Preheat the oven to 200 degrees Celsius and place the duck breast-side up on a rack over a tray.
Roast for 45 minutes, then turn and roast breast-side down for a further 30 minutes until the skin is deep mahogany and crisp.
Insert a meat thermometer into the thickest part of a thigh; it must read at least 74 degrees Celsius before removing from the oven.
Rest for 15 minutes before chopping into pieces and serving.
