Method
Blend the shallots, garlic, lemongrass, turmeric and ground coriander with two tablespoons of water into a smooth paste.
In a mixing bowl, combine the chicken strips with the spice paste, palm sugar, fish sauce and one tablespoon of the vegetable oil, mixing well to coat every piece.
Cover the bowl and refrigerate for at least four hours, or overnight, so the marinade penetrates the meat.
Thread the marinated chicken onto bamboo skewers, four or five pieces per skewer.
Blend the soaked dried chillies with the roasted peanuts, coconut milk and tamarind paste into a coarse, thick sauce.
Simmer the peanut sauce in a small saucepan over low heat for five minutes, stirring often, until glossy and slightly thickened.
Brush a griddle pan with the remaining vegetable oil and heat over high heat until shimmering.
Grill the skewers for three to four minutes on each side, turning once, until charred at the edges and the chicken reaches 74°C on a meat thermometer.
Serve the skewers hot with the peanut sauce and cucumber chunks alongside.
