Whip the double cream with the caster sugar in a mixing bowl with an electric mixer until it holds firm peaks.
Slice the strawberries and kiwi fruit thinly.
Spread a thick, even layer of whipped cream over one side of each slice of bread.
Arrange the fruit in a single decorative layer over half the bread slices, thinking about how the pattern will look once sliced.
Sandwich with the remaining cream-covered bread slices and press together gently.
Wrap tightly in cling film and chill for 30 minutes to firm up, then trim the crusts and slice in half diagonally.
