Method
Slice the baguette diagonally into ½ cm thick pieces, mince the garlic, chop the fresh basil and parsley, halve the cherry tomatoes, thinly slice the red onion, and chop the fresh mint.
Preheat the oven to 200°C.
Combine the drained cannellini beans, minced garlic, lemon juice, fresh basil, parsley, salt, and black pepper in a bowl and mash with a fork until chunky but spreadable, then set aside.
Arrange the baguette slices on a baking tray and drizzle lightly with 2 tbsp olive oil, turning to coat both sides.
Toast the baguette slices in the preheated 200°C oven for 5 minutes until golden brown and crispy.
While the bread toasts, combine the halved cherry tomatoes, sliced red onion, and fresh mint in a small bowl and season with salt and pepper to taste.
Remove the toasted baguette slices from the oven and allow to cool for 1 minute.
Spread each warm crostini generously with the white bean mixture.
Top each crostini with a spoonful of the tomato and mint mixture.
Drizzle lightly with extra virgin olive oil and top with Parmesan shavings if desired before serving immediately.
