Method

Slice the baguette diagonally into ½ cm thick pieces, mince the garlic, chop the fresh basil and parsley, halve the cherry tomatoes, thinly slice the red onion, and chop the fresh mint.

Preheat the oven to 200°C.

Combine the drained cannellini beans, minced garlic, lemon juice, fresh basil, parsley, salt, and black pepper in a bowl and mash with a fork until chunky but spreadable, then set aside.

Arrange the baguette slices on a baking tray and drizzle lightly with 2 tbsp olive oil, turning to coat both sides.

Toast the baguette slices in the preheated 200°C oven for 5 minutes until golden brown and crispy.
