About this dish
Pork loin sliced thin, marinated in grated ginger and soy, then seared hard so the sugars catch at the edges before the marinade reduces to a glaze. A five-minute weeknight dinner that tastes like it took longer.

Method
Finely shred the cabbage and set it aside in iced water to crisp.
Whisk the grated ginger, soy sauce, mirin, sake and caster sugar together in a bowl to make the marinade.
Add the pork slices to the marinade, turn to coat, and leave to marinate for 10 minutes.
Lift the pork from the marinade, reserving the liquid, and dust each slice lightly with plain flour.
Heat the vegetable oil in a large frying pan over high heat and fry the pork in batches for 2 minutes on each side until browned.
Return all the pork to the pan, pour in the reserved marinade, and cook for 3 minutes, turning, checking a slice reaches 63°C with a meat thermometer.
Drain the cabbage well and pile it onto plates alongside the glazed pork.
