Easy: ≤30 min and ≤6 steps
About this dish
A loose, pourable tahini sauce sharpened with lemon and garlic and thinned with ice water until it turns pale and creamy, ready to spoon over grilled vegetables, fish or falafel alike. It thickens on standing, so a splash more water just before serving brings it back.

Method
Whisk the tahini and half the lemon juice together in a bowl; the mixture will seize and turn thick and pasty at first, which is completely normal.
Add the crushed garlic and a pinch of the salt, then whisk in the ice-cold water a little at a time until the sauce loosens into a smooth, pourable consistency.
Stir in the remaining lemon juice and salt to taste, adjusting with a splash more water if the sauce is thicker than you would like.
Spoon the tarator into a bowl and scatter over the chopped parsley before serving.
