Method
Soak the dried shiitake mushrooms in the hot water for 20 minutes until softened, then lift out, slice thinly, and strain and reserve the soaking liquid as stock.
Blend the soaked dried chillies with the shallots and a little water into a smooth chilli sauce.
Bring the reserved mushroom stock to the boil in a saucepan and simmer for 10 minutes to concentrate the flavour.
Blanch the eggless wheat noodles and rice vermicelli separately in a pan of boiling water for 1 minute each, then drain.
Heat the vegetable oil in a wok over high heat and stir-fry the garlic and sliced tempeh for 3 minutes until lightly browned.
Add the sliced shiitake and mushroom rings and stir-fry for 2 minutes until fragrant.
Add the blanched noodles, vermicelli, 300 ml of the mushroom stock and the light soy sauce, and toss over high heat for 4 minutes until the liquid reduces and clings to the noodles.
Add the beansprouts, toss for 1 minute until just wilted, then serve with the chilli sauce and lime wedges.
