Method
Pat the tofu cubes dry, then fry in 2 tablespoons of vegetable oil in a wok over medium-high heat for 6 minutes, turning occasionally, until golden on all sides. Set aside.
Heat 1 tablespoon of oil in the wok over high heat until shimmering, then fry the noodles undisturbed for 2 minutes to blister the underside.
Toss the noodles and fry for a further 2 minutes until lightly charred in patches, then divide between four plates.
Wipe out the wok, heat the remaining oil, and fry the garlic for 30 seconds until fragrant.
Pour in the vegetable stock, vegetarian oyster sauce, light soy sauce and dark soy sauce, and bring to a simmer.
Add the Chinese broccoli stems and simmer for 2 minutes until just tender.
Stir in the tapioca starch slurry and white pepper, and simmer for 1 minute until the gravy thickens.
Return the fried tofu to the wok along with the Chinese broccoli leaves, and stir through for 1 minute until wilted and warmed through.
Ladle the tofu, gravy and greens over the plated noodles and serve immediately.
