About this dish

Silken tofu replaces eggs and oat cream stands in for dairy to produce a custardy, barely-set batter that clings to whole unpitted cherries — the traditional French method of leaving the stones in during baking releases almond-like benzaldehyde into the crumb, deepening the flavour in a way no pitted version can match.

Method

Preheat the oven to 180°C fan (200°C conventional). Grease a 24cm round ceramic or cast-iron baking dish with vegan butter and dust lightly with 1 tablespoon of the caster sugar, tipping out any excess.

Combine the silken tofu, oat cream, oat milk, remaining caster sugar, vanilla extract, and almond extract in a blender. Blend on high for 60 seconds until completely smooth.

Add the sifted flour, cornstarch, and salt to the blender. Pulse 6-8 times until just incorporated — do not overblend once the flour is added.

Arrange the cherries in a single layer across the base of the prepared dish, spacing them evenly.

Pour the batter slowly over the cherries so they remain evenly distributed. Let the dish rest for 10 minutes at room temperature to allow the flour to hydrate.

Transfer to the centre rack of the preheated oven and bake for 40-45 minutes, until the edges are set and lightly golden and the centre jiggles only very slightly when the dish is nudged — it will firm further as it cools.

Remove from the oven and cool on a wire rack for at least 20 minutes before serving. Dust with icing sugar just before bringing to the table. Serve warm or at room temperature directly from the dish.
