Ingredients

Fresh Produce

  • Mixed mushroomscremini, shiitake, and oyster, torn or halved into large pieces700 g

Method

Tear or halve the mushrooms into large, roughly equal pieces — do not wash them, just wipe clean with a damp cloth if needed. Mince the garlic, chop the parsley, and cube the cold vegan butter; keep everything separate and the butter refrigerated.

Heat a large cast-iron or stainless steel skillet over high heat until it just begins to smoke lightly. Add the neutral oil and swirl to coat.

Add the mushrooms in a single, uncrowded layer (cook in two batches if needed) and leave them completely undisturbed for 3-4 minutes, until the undersides are deeply golden and they release from the pan naturally.

Season with half the salt and all the pepper, then toss and cook for a further 2 minutes until evenly browned on most sides.

Reduce the heat to medium-low and push the mushrooms to the edges of the pan. Add the garlic to the centre and cook for 45 seconds, stirring constantly, until fragrant but not coloured.

Add the white wine or vermouth and cook for 1 minute, scraping up any browned bits from the base of the pan.

Remove the pan from the heat. Add the cold cubed vegan butter all at once and toss continuously until it melts and emulsifies into a glossy sauce coating the mushrooms.
