About this dish
Replacing dairy yogurt with full-fat soya yogurt gives this classic French snack cake an exceptionally moist, tender crumb — the acidity activates the baking powder beautifully, while a double hit of citrus zest and fresh juice perfumes every layer.

Method
Preheat the oven to 180°C (160°C fan). Grease a 20 cm round cake tin and line the base with baking parchment. Finely grate the zest of the orange and lemon, then juice the orange and lemon separately and measure the quantities.
In a large bowl, whisk together the soya yogurt, caster sugar, oil, orange juice, lemon juice, orange zest, and lemon zest until fully combined and smooth.
Sift the flour, baking powder, bicarbonate of soda, and salt over the wet ingredients, then fold gently with a spatula until just combined — stop as soon as no dry streaks remain to avoid a tough crumb.
Pour the batter into the prepared tin and bake on the middle shelf for 38–42 minutes, until the top is deep golden, the cake has pulled slightly from the sides, and a skewer inserted into the centre comes out clean.
Remove from the oven and leave the cake to cool in the tin for 10 minutes, then turn out onto a wire rack.
Stir the marmalade with the warm water until loosened, then brush the glaze evenly over the top of the warm cake and leave to set before slicing.
