Method
Peel and slice the aubergines into 1cm-thick rounds.
Heat the vegetable oil in a large frying pan over a medium heat and fry the aubergine slices in batches for 4 minutes on each side, until deep golden and soft.
Transfer the fried aubergine to a plate lined with kitchen paper to drain.
In the same pan, fry the onion over a medium heat for 8 minutes, until deep golden and caramelised.
Add the garlic and ground turmeric and fry for 1 minute, until fragrant.
Return the fried aubergine to the pan and mash it into the onion mixture with a fork, until mostly smooth.
Stir the kashk through the aubergine mixture and season with fine sea salt and black pepper.
Warm a little reserved oil in a small saucepan and sizzle the dried mint for 1 minute, until fragrant, to make the garnish oil.
Spoon the aubergine and kashk mixture into a serving dish, drizzle over the mint oil and scatter with the crushed walnuts.
