About this dish
Spinach blanched briefly, squeezed dry and left to soak in a light dashi and soy marinade before being topped with bonito flakes. A cold, minimal side that tastes far more savoury than its short ingredient list suggests.

Method
Bring a large saucepan of water to the boil.
Blanch the spinach for 1 minute until just wilted, then drain and plunge immediately into cold water to stop the cooking.
Squeeze the spinach firmly to remove excess water, then cut into 4cm lengths.
Whisk together the dashi stock and soy sauce in a shallow dish.
Add the spinach to the dashi mixture and leave to soak for 10 minutes so it absorbs the seasoning.
Lift the spinach out, arrange in small serving dishes and top with bonito flakes before serving.
