Method

1

Finely chop the onion.

Approx. 3 minutes
2

Peel and crush the garlic cloves.

Approx. 2 minutes
3

Roughly chop the fresh coriander.

Approx. 2 minutes
4

Melt the butter in a small saucepan over a low heat, then set aside to cool slightly.

Approx. 3 minutes
5

Heat a little of the melted butter in a large saucepan over a medium heat and cook the onion until softened.

Approx. 6 minutes
6

Add the garlic, ginger, half the ground cinnamon and the saffron, and cook until fragrant.

Approx. 2 minutes
7

Pour in the fish stock and bring to a simmer.

Approx. 2 minutes
8

Add the fish chunks and prawns, cover and simmer gently until the fish flakes easily and the prawns are pink and opaque throughout, about 6 minutes.

Approx. 6 minutes
9

Check the temperature of the fish with a meat thermometer; it should read at least 63 degrees Celsius.

Approx. 2 minutes
10

Lift out the fish and prawns with a slotted spoon and set aside.

Approx. 4 minutes
11

Boil the remaining stock in the pan, uncovered, until reduced to a thick syrup.

Approx. 10 minutes
12

Reduce the heat to low, pour in the beaten eggs, and stir continuously until softly scrambled and the liquid has been absorbed.

Approx. 5 minutes
13

Flake the fish into large pieces, then stir the flaked fish, prawns and chopped coriander into the egg mixture, season to taste with salt and black pepper, and leave to cool.

Approx. 5 minutes
14

Toast the flaked almonds in a dry frying pan over a medium heat until golden, then roughly chop.

Approx. 5 minutes
15

Lay four sheets of filo pastry on a baking tray, brushing each with melted butter and overlapping them to form a large circle.

Approx. 6 minutes
16

Spoon the cooled seafood filling into the centre of the filo circle and scatter over the chopped almonds.

Approx. 3 minutes
17

Fold the edges of the filo over the filling to enclose it completely, then brush the top with more melted butter.

Approx. 4 minutes
18

Layer four more buttered filo sheets over the top, tucking the edges underneath to seal the pie neatly.

Approx. 5 minutes
19

Bake in a preheated oven at 190 degrees Celsius until the pastry is deep golden and crisp.

Approx. 30 minutes
20

Dust the warm pie with icing sugar and the remaining ground cinnamon in a crisscross pattern, then serve.

Approx. 3 minutes
