1

Season the chicken thighs with half the salt and the black pepper.

Dissolve the saffron threads in 2 tablespoons of hot water.

Approx. 2 minutes
3

Peel and slice the onion.

Approx. 3 minutes
4

Rinse the rice under cold water until it runs clear.

Approx. 3 minutes
5

Heat a little of the melted butter in a large saucepan, add the sliced onion and ground turmeric and cook until softened, about 5 minutes.

Approx. 5 minutes
6

Add the chicken thighs and enough water to cover, bring to a simmer, cover and cook until a meat thermometer reads 74°C, about 25 minutes.

Approx. 25 minutes
7

Lift the chicken out and, once cool enough to handle, shred the meat from the bone.

Approx. 6 minutes
8

Bring a large saucepan of salted water to the boil, add the rice and cook for 6 minutes until just parboiled, then drain.

Approx. 8 minutes
9

In a mixing bowl, whisk together the yoghurt, eggs, half the dissolved saffron water and the remaining salt, then stir in the parboiled rice to coat evenly.

10

Grease a loaf tin generously with a little of the remaining melted butter, then press half the rice mixture into the base.

Approx. 4 minutes
11

Scatter the shredded chicken evenly over the rice layer, then top with the remaining rice mixture, pressing down firmly.

Approx. 4 minutes
12

Drizzle over the remaining saffron water, cover the tin tightly and cook over low heat on the stovetop until the base is deep golden and crisp, about 45 minutes.

Approx. 45 minutes
13

Rinse the dried barberries in a fine-mesh sieve.

Approx. 2 minutes
14

Warm the last of the butter in a small saucepan, add the barberries and toss for 2 minutes until glossy.

Approx. 2 minutes
15

Run a knife around the edge of the tin, invert the tahchin onto a board, scatter with the glossy barberries and slice to serve.
