Method
Cut the salmon and tuna into strips, using fillets that have been previously frozen to minus 20°C for at least 24 hours for food safety.
Slice the avocado, cut the cucumber into thin batons, and slice the spring onions.
Cut each nori sheet in half to make eight rectangles, and set out all the fillings on the table.
Hold a nori half in one hand and spoon a small mound of sushi rice onto one corner, spreading it thinly.
Lay a few pieces of salmon, tuna, avocado, cucumber and spring onion diagonally across the rice.
Fold the bottom corner of the nori up and over the filling, then roll into a tight cone, dabbing a little rice to seal the edge.
Repeat to make 8 cones and serve immediately with mayonnaise and soy sauce for dipping.
